Clam meat is rich in protein and relatively high in gtycogen, which is similar to prawns and crabs. In the study, the clam meat was pickled using three different oils such as groundnut oil, gingili oil and sunflower oil and their storage stability microbial trend and taste were assessed. The organoleptic scores for the pickles prepared in gingili oil, groundnut oil and sunflower oil are relation to storage period, flavour (8.8), texture (7.1) and taste (8.6). The colour and flavour of pickles were good and similar for traditionally prepared pickle from seafood. The toughness of the meat in all the three pickles became moderately soft after 3 months storage The pH of the pickles was ranged from 5 to 5.2 and it decreased with the storage period (4.2 to 4.8). The lower level of microbial load and no mould growth was encountered throughout the storage period for three types of pickles. The using sunflower oil preparation of pickle was good taste and flavour compared to other than pickles.

Electron beam curing of commercial grade epoxy acrylate (Disphenol A diglycidyl ether diacrylate) on wood surfaces to provide high performance protective and decorative coating is discussed in the paper. Effect of three multifunctional reactive diluent monomers namely, 1,6-Hexane dioldiacrylate (HDDA), Dipropylene glycoldiacrylate (DPGDA) and Tripropylene glycoldiacrylate (TPGDAj on the performance characteristics of coating such as. abrasion resistance, scratch resistance, gloss at 60° angle, pencil hardness, pendulum hardness, impact resistance, chemical resistance, stain resistance, steam resistance and cigarette burn resistance has been investigated. Results of the study show that presence of reactive diluents improved abrasion resistance, hardness, chemical resistance property and ease of application by lowering the viscosity of the coating. However, higher diluent content resulted in micro-distortions on the coating surfaces and induced brittleness that adversely affected gloss and scratch resistance of the coating. ED cured wood surfaces exhibited excellent stains and steam resistance properties.`

The seafood (Squid) has been studied for biological and chemical hazards. The study was carried out for four months. It is found that bacteriological load in raw material gradually increased from December 2004 to March 2005, i.e. TPC 40,000 to 2,50,000, E coli 5-13, Stapphylococcus aureus 30-68. This increase in bacterial load was due to increase in temperature. simultaneously analytical study of food sample for pesticides carried out in above said months (once in each month), showed certain pesticides (Aldrin and eldrin) found 1.8 ppb, 1.00 ppb respectively in month of December 2004 and January 2005. While BHC, dieldrin, DDT were not detected. The bacteriological load and pesticides content showed similar pattern with finished product i.e.e gradual increase in bacterial load from December 2004 to March 2005. Potable water is also tested; all parameters were found to be below the limits. Due to present investigation it is concluded that sanitary and hygienic condition in the processing unit was satisfactory.

Capsaicin was used as index to evaluate the quality of the most popularly consumed capsicum brands by the population of the central and southern Maharashtra (i.e., districts of Pune, Solapur, Kolhapur, Satara and Sangli, Maharashtra, India. The phenolic group in capsaicin was reduced by phosphomolybdic acid to lower acids of molybdenum, while the resulting blue colored component was read at 650nm as its intensity was directly proportional to its concentration. This was also accompanied by the estimates for foreign matter, moisture content, alcohol, and acetone and ether soluble extractives. After evaluation it was clear that the Pravin sample was the most therapeutic as high capsaicin content was present. Thus it was advisable, that the population should consume only the packed Agmark grade capsicum samples/brands when the medicinal or the therapeutic value capsicum is desired also in the preparation of various food items.

The background behind this work is the millions of Biomass gas plants across the rural India and the "potential to enable power generation simple retrofit to a conventionally available maruthi engine so as to enable 100% biogas power on is attempted. Employments on one such 3 cylinder four stroke S.I. engine have been carried out with modification to supply gas. The performance of spark ignition engine using flue gas generated in a fixed bed down draft suction type gasifier using agricultural and forestry residues was measured on a eddy current dynamometer test bench. The parameter measured includes torque, power output emission measurement, exhaust gas temperature and combustion analysis for the operation on gasoline LPG and producer gas. Reduction of CO and hydrocarbons emission where attained. And the engine suffered less thermal stress under producer gas operation when compared to other fuels. While analyzing the combustion study it was found that heat release as well as the_cylinder heat release the cylinder pressure are less for producer gas when compared to other two fuels.

Effect of different filling media on heat penetration characteristics of Tuna (Katsuwonus pelamis) in indigenous polymer coated easy open-end tin free steel cans was studied. 110 g of Tuna meat was packed into 6 oz TFS Cans (302 x 109) and filled with 60 g of different media like brine (2%), oil (double refined ground nut oil), curry and tomato sauce. All these cans were processed at 121.1degreeC to a F₀ value of 10. Heat penetration data were recorded using Ellab TM 9608 Temperature recorder cum process value integrator. The process time to achieve F₀ 10 was 25 minutes in brine, 40 minutes in curry, 41 minutes in sauce, and 43 minutes in oil. The results indicated that heat penetration is faster in brine followed by curry, sauce, and oil. Filling medium was also found to influence the texture properties of the meat.

Antioxidant effect of clove on the frozen storage stability of fish steak from Indian shad (Tenualosa ilishn) was studied. The steaks were treated with clove solutions at a rate of 0.05%, 0.1% and 0.2% respectively. After freezing, these steaks were glazed with chilled water, packed in low density polyethylene bags (LDPE) and frozen stored. The changes in biochemical and sensory quality were evaluated during storage. The treatment with clove was found to have a strong antioxidant effect. A significant increase in frozen storage stability was recorded with an increase in clove concentration. Based on the overall acceptability scores, treatment with 0.1% clove solution was found to have better consumer acceptance compared to other samples.

Study was carried out on the shelf life, fatty acid composition and changes in lipid profite of Sturgeon (Acipenser stellatus) from the Southern Caspian Sea for twelve months in frozen storage at -22°C. Fresh fish tissue had 84.41% unsaturated fatty acids whereas in the case of twelve month frozen samples it was 77.45%. Significant amount of polyunsaturated fatty acids (PUFA) was present in the samples. The amount of tissue lipid (9.71%) and w-3 fatty acids (16.64%) has come down to 8.03 and 8.98%, respectively during frozen storage. The peroxide value increased to 20.11 meq/kg by twelve months in frozen storage from the initial level of 7.24 meq/kg. There were significant variations in the amount of some fatty acids like myristic, a - linolenic and arachidonic acids. Significant difference was also observed in co-3 and co-6 fatty acids series during frozen storage. The results of this study indicate that the maximum shelf life for Sturgeon is up to six-months in frozen storage.

The TSS content was maximum (8.45 degree Brix) in cv Mosambi while it was lowest (6.92 degree Brix) in cv Blood Red Mutation which was at par with cv Valencia Late. The acidity was lowest (0.49 %) in cv Mosambi while the highest percentage of acidity (0.86 %) was recorded in cv Valencia Late .As the juice percentage is concern the maximum (47.80 %) of juice was recorded in cv Valencia Late followed by cv Blood Red Malta which was at par with cv Blood Red Mutation and Mosambi. The RTS prepared from all the cultivars of Sweet orange was acceptable. Among all the cultivars, cv Blood Red Malta was having highest organoleptic score (7.88) followed by Mosambi.

The TSS content was maximum (8.4 degreeBrix) in cv Lane Late Navel orange while it was lowest (6.5 degree Brix) in cv Valencia Keenen. The acidity was lowest (0.51 %) in cv Washington Navel Orange while the highest percentage of acidity (1.15 %) was recorded in cv Valencia Tri-5/13. The maximum (48 %) juice content was recorded in cv Minneola-Tangelo-6-Eco followed by cv Washington Navel Orange and Lane Late Navel Orange. The RTS prepared from all the exotic cultivars in Sweet orange was acceptable. The nutrient content in the leaves were nitrogen 1.75-2.66 per cent, phosphorus 0 09-0.23 per cent, potassium 0.71-1.40 per cent, calcium 1.60- 4.15 per cent, and magnesium 0.18 - 0.43 per cent. The top performing orchard leaves had 2.66 per cent N, 0.23 per cent P, 1.40 per cent K, 3.30 per cent Ca, and 0.432 per cent Mg.

In a maiden 'attempt in utilizing solar radiation in dairy product preservation, the solar radiation was passed on to khoa through / some media in order to extend its shelf life under room temperature (32 to 37°C ). Similarly, application of microwave heating technique for the same purpose was also tried. Influence of the solar radiation through plain glass (S₁) and convex lense (S₂) and microwave heating powers (ranging from 40% to 60%) for 60 sec to 80 sec) on microbiological, chemical and sensory qualities of the fresh khoa was studied. The mean Standard Plate Count (SPC), Yeast and Mould Count (YMC) and spore count of fresh khoa (day-0) ranged from 0 to 4.33 x 10², 0 to 11.66 and 0 to 9.67 cfu/g. The chemical and sensory qualities of the samples remained almost similar (8.5 points out of 9) of control (8.6 point) The application of microwave heating was observed to be quite superior in reducing the SPC, YMC, and spore count of the khoa samples.

Influence of microwave heating with power levels (10-100%) and two timings (60 seconds and 80 seconds) on microbiological (SPC and VMC) quality of khoa during storage was studied. The treatments M₄T₁ M₆T₂ were found to be promising based on germicidal efficacy as well as the overall sensory quality of khoa samples. In case of treatments M₇T₂ onwards the multiplication rate of microorganism was quite negligible. It was further noticed the efficacy of killing the Yeasts and mould for the samples was more as compare to the killing other bacterial species. This may be evident from the data on the microbial counts for M₇T₂ in case of SPC and M₄T₂ in case of YMC.

Initation shrimp fingers (ISF) prepared from Nemipterus bleekeri were packed in air pack and vacuum pack and stored at 4degreeC. Quality characteristics viz. proximate, composition, biochemical, microbial and sensory characteristics were investigated and shelf life determined. Salt (NaCl) concentration of 1.5% with sucrose concentration of 1% and setting process at 40degree C with 20 min duration were found to be optimum for good gel formation. The moisture, protein, fat and ash contents remained almost unchanged during storage. pH gradually decreased while TMA-N and TVB-N contents increased during storage period. Microbial parametrs such as total plate count, staphylococcal count and psychrophilic counts also increased significantly. Organoleptic evaluation revealed that the air packed samples had the storage life of 15 days while vacuum packed samples had the shelf life of 18 days. One day icing of fish before processing did not affect the quality of ISF under same experimental conditions .

Study of optimisation of lipase extraction using aqueous two-phase system containing PEG6000-phosphate system was initially carried out using industrial lipase preparation. The experiment was done by manipulating four parameters that mainly effect protein partition coefficient such as the composition of system components; PEG6000 and phosphate salts, the composition of an added salt, NaCl and the pH of the system. The Response Surface Methodology (RSM) had been applied to find the location of the most suitable system conditions for extracting lipase. It was demonstrated that at system compositions of 7.57% w/w PEG6000/ 12.01% w/w phosphate/ 3.0% w/w NaCl and pH of 7.37, the optimum conditions of predicted lipase recovery from the broth attained was 73.84%. The confirmation experiments were performed and the results of lipase extraction from Aspergillus terreus SUK-1 lipase have shown an increment of lipase recovery of 77% in the bottom phase and most proteins other than lipase were found to partition into the top phase. In the subsequent extraction experiments where higher volume of 100 times larger was applied, the result of partitioned lipase were not much different with the smaller scale and the lipase recovery increased 2% from the previous experiments.

Hybrid composites were developed by using naturally occurring fabrics belonging to the species Ceiba pentandra [Kapok] / Agave veracruz [sisal] and Kapok/glass with unsaturated polyester resin as a matrix and using the hand lay-up technique. The chemical resistance of these hybrid composites to acetic acid, nitric acid, hydrochloric acid, sodium hydroxide, sodium carbonate, ammonium hydroxide, benzene, toluene and water was studied. The effect of sodium hydroxide (NaoH) on the chemical resistance properties of the hybrid composites was also studied. Similarly, unhybridised samplcs and unreinforced matrix have been tested for various acids, alkalis and solvents. It was observed from the results that the developed hybrid composites are resistant to all the chemicals except toluene and carbon tetrachloride than the unhybridised composites and matrix. The kapok/glass hybrid composites showed better chemical resistance than the kapok/sisal hybrid composites. These hybrid composites can be thought of for making water and chemical storage tanks.

Losses in cold store were very low (5 to 6 percent) as compared to ambient storage (20-25 percent). There was no rotting, sprouting and black mould infection in cold storage, while considerable amount of rotting and black mould was noticed in ambient stored onions in storage structure. In irradiated bulbs, there was no sprouting irrespective of storage conditions. There were some sprouted bulbs in ambient stored untreated and maleic hydrazide treated bulbs. The storage losses in post-cold storage period were less in gamma irradiated cold stored treatment than all other treatments. The sprouting of bulbs increased rapidly in untreated and maleic hydrazide treatment. But very less sprouting was noticed in gamma irradiated cold stored bulbs during four months of post-cold storage. The weight loss, rotting and black mould infection was also lower in cold stored onion. Thus, the cold storage with gamma irradiation was found to enhance self-life and minimise storage losses in onion.

In the study, the HPLC conditions (attenuation setting, absorbance range setting, chart speed setting and the solvent elution programme) were standardized to resolve completely, a mixture of three β-casomorphins, viz., β-casomorphin 3 (β-CM 3), morphiceptin and β-CM 5, which may be breakdown products of proteolysis in fermented milks. RP-HPLC analysis was done on a C18 analytical column using two solvents (A - 0.1% triflouroacetic acid (TFA) in water, 8 - 0.1% TFA, 90% acetonitrile and 9.9% water) and a gradient solvent elution programme at a flow rate of one ml/min. Complete resolution of the individual casomorphins were achieved at attenuation setting of 4, absorbance range setting of 0.64, chart speed setting of 4 mm/min and a linear gradient increase of 0.375% B/min.

Study was conducted to compare the constraints faced by Co-operative and Private dairy plants at these vital value addition stages. For this, one dairy plant from Co-operative sector and one dairy plant from Private sector were selected purposively in Coimbatore district of Tamilnadu. To identify the major constraints faced by the dairy plants in procurement, processing and manufacturing, and distribution of dairy products, the number of respondents was also selected based on probability proportion to sample size method. Some of the members of co-operative society selling the milk to private milk vendors and some of the collection centres collecting the inadequate quantity of milk were the very serious problems faced by Co-operative and Private dairy plants respectively. Under utilization of transport vehicles at milk transporters level, under capacity utilization of chilling centres and also under capacity utilization of plant at milk processing and manufacturing level was the most serious constraints faced by both the plants. At distribution level, higher sales commission to commission agents, wholesalers and retailers, and highly competitive market environment was the most serious problems faced by both the plants. In order to minimize the identified constraints and develop the dairy industry in a sustainable manner. Co-operative and Private dairy plants should formulate a long-term vision and strategy. Encouraging value addition, effective sales promotion and advertisement strategy and also focusing on consumer oriented market research and development are some of the suggested strategies.

The slices were treated at various temperatures, timing and slice solution ratios and the best pretreatment determined. It was observed thai both fat and fiber levels produced significant (P<60> 0.01) effect on the yield of Paneer. With increasing the soy fiber level, yield of Paneer increased sharply and linearly. A similar trend was observed in case of Paneer made from different fat levels. Design expert package suggested that the use of 2.5 per cent fat level in milk together with 0.56 per cent soy fiber would permit manufacture of an optimum quality low fat Paneer.

Particle board can be developed from Date-Pa!m Leaves (DPL), the annually renewable agro waste DPL have higher ultimate fibre length (1.25 - 250 mm) and a-cellulose contenf (about 60%) than hard wood/plywood and jute slick. Work of adhesion (contact angle) values between DPL and polymer binder (synthetic and natural) is very good. The impact strength of DPL Board is much higher than wood/plywood and jute stick (J.S.) particle board. The moisture content and swelling % in water of Date Palm Leaf Particle Board are 6.8 and 5.4 respectively. During development of DPL particle board, 1.5% water repellent chemical was used to confer DPL board water proof. Based on these pertinent findings, we have successfully developed and manufacture DPL particle boards (size 2' x 2' x 1/2"). The tentative cost of DPL particle board is about 20% of the cost of wood/plywood boards.

Chhana podo is an indigenous milk based sweet prepared by baking. The product is commonly prepared in Orissa by using chhana, maida/suji and sugar. It has pleasant cooked flavour and rich taste with cake like body & texture. Attempts were made to standardize the production of chhana podo. Between the two binding agents used at 5 or 10% (based on chhana), suji at 5% level was adjudged most suitable for podo production. Baking temperature of 200° C for 65 min. in an aluminum tray with dough thickness of 2 - 2.5 cm resulted in a uniformly baked product. The optimum sugar level was found to be 30% of chhana for the desired sweetness. About 12-15% of moisture evaporated during baking. Chhana podo packed in polyethylene pouches recorded a shelf life up to 4 and 30 days at 37°C and refrigerated temperatures, respectively. Vacuum packaging increased the shelf life by 2-3 days at 37°C. Incorporation of 0.1% potassium metabisulphite and otassium sorbate in the dough increased the shelf life up to 8 days at 37°C. Spoilage of podo was observed to be due to the white, green and black mould growth on the surface.

Dilatometry was used to determine the percentages and ratios of solid and liquid fractions of pure milk fat, adulterant oils and fats and adulterated ghee samples at a temperature of 30 and 40°C. At 30°C, it was noted that vegetable oils remained transparent liquid with no solid mass. At this very temperature the ratios of solid / liquid fractions for buffalo and cow ghee were 2.98 and 2.37, respectively, whereas these values were 5. 79, 3.53 and 4.30 for goat body fat, pig body fat and vanaspati, respectively. Addition of body fats and hydrogenated oils (vanaspati) to pure ghee obviously caused an apparent increase while those of vegetable oils gave a considerable decrease of solid / liquid ratio. Based on such information, it was explored to detect the vegetable oils, body fats and vanaspati added to pure ghee at different levels ( 5, 10 and 15 percent).
