The boys (54-4%) were allowed to take higher education, girls treated with remedies where as boys were provided allopathic treatment. In case of attitude of mothers towards girl child. It was found that majority of the respondents in LIG had negative attitude towards girl child and majority of the respondents in MIG & HIG had natural attitude towards girl child.

Study was conducted to assess the nutrient intake and meal pattern of housewives of Professors/Teachers of Allahabad city. 120 housewives were selected from five age groups: 30-34 years (n=30), 35-39 years (n=17), 40-44 years (n=18), 45-49 years (n=20) and 50-54 years (n=35). Dietary intake was determined by 24 hours dietary recall method and the average nutrient intake was calculated. In all age groups mean daily nutrient intake of energy, protein, fat, calcium, phosphorus, iron, thiamine, riboflavin and vitamin C were comparatively more than the recommended dietary allowances (RDA) except vitamin A which was less than RDA. Maximum (42.5 percent) housewives followed Early morning + Breakfast + Mid-morning + Lunch + Evening snacks + Dinner + Any other meal pattern. Maximum (54.17 percent) housewives were vegetarians, 35 percent non-vegetarians and the remaining 10.83 percent were eggitarians.

Cassava and soy flour were incorporated into two recipes, viz, Vegetable chawmein and alloo paratha using their standard ingredients and method of preparation. Cassava and soy flour were incorporated in refined wheat flour at four different level -(32.5,12.5,5%) T₁, (23.5,16.5,10%) T₂, (15.5,19.5,15%) T₃, and (7.5,22.5,20%) T₄ respectively for two products. T₁ served as the control. The products were subjected to organoleptic test by panel of five judges, scoring was done based on the Nine-Point Hedonic scale and their proximate constituents, their nutritional composition was determined by the use of AOAC (1980) method. In sensory scores, all the products were acceptable with T₃ (8.2) in Vegetable Chawmein and T₂ (8.36) in allo paratha respectively. Nutrient analysis of the products showed an increase in protein and calcium content when compared with control. Iron content was also slightly increased.

A study was undertaken to assess the physico-chemical characteristics of five varieties of baby corn. The total weight as well as weight of husk and silk was recorded maximum in HM-4 variety, whereas maximum weight of de husked cob was recorded in BVM-2 followed by Suwan, HM-4, BM -1 and Priya. With regard to organoleptic acceptability of raw baby corn, Suwan and BVM -2 scored highest followed by Priya, HM-4 and BM- 1. Nutrient composition in respect of crude protein, fat, total sugar end starch content ranged from 1.78 to 3.24, 0.228 to 0.537, 9.68 to 4.88 end 1.31 to 1.61 per cent. respectively. Significant variation with regard to vitamin C, Iron and calcium was observed among different selected varieties. It may be concluded that like other vegetables, baby corn contains appreciable amounts of nutrients and being low in fat and carbohydrate has potential to bring dietary diversity and value addition to products of specific dietary importance.

Safety of food served in hostel mess (M-l and M-2) of two colleges of New D>elhi was assessed with regards to socioeconomic status of food handlers, catering operations and food material handling practices. Microbiological analysis was carried out to assess surface sanitation and bacteriological quality of water and food samples. Results on socio economic status of the subjects revealed that majority of food handlers were adult males and untrained. One fifth of them were illiterate. With regard to catering operations lacunae were found in kitchen layout, upkeep of equipments, utensils and accessories, water storage practices, pre-preparation, preparation, dishwashing and waste disposal practices, The overall desirable practices on catering operations and food material handling were much better in M-l as compared to M-2, Personal hygiene practices of the food handlers were also inadequate in terms of use of protective clothing and hand washing practices. Microbial content of food preparation and service equipments were found to be unsatisfactory. Water drawn from the taps was generally satisfactory in quality, but the quality deteriorated following storage in case of M-2. Microbiological analysis of 10 common food items served in both the mess showed high SPC (log 4 to log 7) with M-2 showing higher counts than M- 1 . As many as 50 per cent of the food samples, tested positive for coliform bacteria in both the mess. Microbial quality of drinking and cooking water was within the acceptable limits when drawn from the taps but deteriorated on storage and mishandling.

The present study was undertaken to assess the quality characteristics of value added health mix with carrot and beetroot powder with different proportion of cereal and grain in the form of two types of extruded powder. The proportion of rice, wheat and Bengal gram in different health mix formulations affected the WAI and WSI but was unaffected with the type (i.e. extrudates prepared from roasted or raw grains), which had been considered for making formulations. Colour of both type of health mix was significantly different which was affected with the type of extrudates from which health mix was prepared but it did not affect the sensory acceptability score for appearance and colour. Sensory acceptability of both types of health mix samples was statistically similar but it was significantly affected with the proportion of rice, wheat and Bengal gram in them. The mean overall acceptability scores was slightly higher for sample pr~pared with extrudates from rice (10 per cent), wheat (10 %) and un roasted Bengal gram (10 %) with 2.5 per cent beetroot and 4 per cent carrot powder but the protein and but the protein and p-carotene content in the health mix prepared with extrudates from rice (15 %) and un roasted Bengal gram (15 %) was higher the former sample. Nutritive value of this health mix sample revealed that it contained 381 Kcal, 76.48 per cent carbohydrates, 14.8 per cent protein, 1.84 per cent fat. 2.91 per cent ash and O.77per cent dietary fibre. The calcium,iron and p-carotene were 301.97 mg, 1.64 mg and 0.731 mg per cent, respectively. In view of the calories, protein and p-carotene content. this formulation with extrudates from rice (15 %) and unroasted Bengal gram (15 %) has better scope for the preparation of health drink mix with 2.5 per cent beetroot and 4 per cent carrot powder.

Study has been carried out to determine physical growth of children aged 10 to 13 years. 139 students both boys and girls were selected from two villages of Dharwad taluk during 2008-09. The results revealed that the mean height and weight of rural boys and girls were significantly below NCHS (50th percentile) and ICMR standards. In case of boys and girls, greater gain in height was observed between 10-11 years as compared to 11-12 and 12-13 years and greater gain in weight was observed between 12-13 years as compared to 10-11 and 11-12 years. Further, age was significantly and positively related to height, weight and chest circumference at 0.01 level.

Study on stress and health status of 105 primary school teachers was conducted in Dharwad city during 2008-09. The married teachers more than 25 years of age with at least 5 years of teaching experience were selected for the study. Stress of female primary school teachers was assessed by using Stress Inventory for Teachers (SIT) developed by Sheeja (1999) and health status by Post Graduate Institute of Medical Education and Research (P.G.I) Health Questionnaire N-2 developed by Wig and Verma (1978). Results revealed that more than half of the teachers (55.2-64.8%) indicated average to high levels of stressors as well as overall stress and 35.2-44.8 per cent low levels respectively. Majority of the teachers (88.6%) also indicated mildly affected health status and only 11.4% were moderately affected. The stressors as well as overall stress of teachers had negative and highly significant relationship with age and work experience where as positive and significant with education. The relationship between the types of stressors as well as overall stress and health status was positive and significant, indicating high levels of stressors increased the health problems (neuroticism) significantly among the primary school teachers.

MDM can also be a vehicle for distribution of fortified foods to tackle micronutrient malnutrition, though at present not in operation (experimental studies have proven that this approach has a positive outcome).

Plants are being used for improving the quality of diet and sustaining or regulating good health. Herbal medicines not only provides nutrients but also strengthen and supports the action of digestive system, speeding up the rate of proceeding food and improving the absorption of nutrients. Pigments found in plants play important roles in plant metabolism and visual attraction in nature. Major plant pigments include carotenoids, anthocyanins and other flavonoids, betalains and chlorophylls. They are also rich in flavonoids and other phenolic constituents. Their antioxidant activity makes them chemo preventive and adds various other medicinal values to them. For the present study, a market survey were conducted at Coimbatore city, Tamil Nadu to know about the availability of synthetic food colours in the market. Eight commonly available medicinal plants, namely annatto seeds, madar root, hibiscus flower, grape skin, wheat grass, curry leaves, spinach and tomatoes were selected. Hibiscus flowers and grapes skin colours had the maximum phenolic content of about 2.5 mg/100 g followed by madar and wheat grass (1 mg/100 g each) and annatto seeds (0.4 mg/100 g). The antioxidant activity of hibiscus flowers were very high (1720 μg/g) followed by grapes skin (1600 μg/g). Madar root (372 μg/g), annatto seeds (360 μg/g) and wheat grass (344 μg/g) had nominal values. The developed natural food colours were used in selected recipes.

A study on influence of child's, parental and familial characteristics on the social and personal skills of mentally challenged children conducted during 2008-09 revealed that a higher percentage of mentally challenged children's social and personal skills (39.62%) were in moderate level followed by low (35.5%) and high levels (24.53%). Child's age had significant influence on acquisition of skills while gender, ordinal position and sibling status did not influence the attainment of skills. Further acquisition of skills of mentally challenged children did not differ with parental characteristics (parent's education and occupation). Similarly, familial characteristics viz. caste, religion, family type, family size, family income and socio-economic status did not significantly influence the skills of mentally challenged children. The sample for the study comprised 53 mentally challenged children in the age group of 5-16 years drawn from three special schools in Hubli and Dharwad city, Kamataka.

A study was undertaken in Thiruvananthapuram district to assess the constraints faced by the functionaries in implementing and by the participants/beneficiaries in undertaking the National Nutritional Anaemia Control Programme (NNACP). It was assessed by eliciting the constraints as experienced by them. This along with the suggestions offered by them for improving the functioning of the programme and for bringing maximum participation from the participants were also assessed. The study revealed that 39 percent of the functionaries and 26 percent of the participants cited irregular supply of IFA tablets as one of the major constraints. The study felt the need for periodic intervention with educational component for both functionaries as well as the participants.

Farm women carry out 75 to 80% of farm work with 50 to 65% of them contributing to agricultural labor. The study was conducted in district Kurukshetra of eastern Haryana. The various health problem faced by farm women during different farming operations and their treatment sources were studied. The information was collected from 150 farm women randomly selected from different villages. The study revealed that a majority of farm women suffered from zoonotic diseases and 30% of the respondents met with accidents like injury and insect bite. Regarding toxic and physical hazards, majority of the respondents suffered from infection, cuts common cold, bodyache and eye-ailments. Farm women were mostly involved in harvesting operations and storage of food grains. Maximum use of health center was observed in case of hard of hearing, skin infection, anemia and abortion. The indigenous method of treatment was followed by farm for treatment of insect bite.

This study aimed to assessment the nutritional quality of raw milk procured from six different locations, three organized dairy farms, and three non organized dairy farms in Varanasi city of Uttar Pradesh in winter, summer and rainy season. The mean values of specific gravity were found to be 1.029±0.012, 1.029±0.011 and 1.028±0.015 in summer, winter and rainy seasons respectively. The result indicated that there were significant difference in specific gravity at P<60>0.01in the group of interaction between season, location and milk. The higher fat percent (g%) was obtained during winter season than in summer and rainy seasons (6.0±0.025, 5.5±0.205 and 4.9±0.200 respectively). Fat content of milk sample revealed significant difference (P<60> 0.01) in season, location, milk, and their interactions. Lactose content (g%) was 4.81±0.194, 4.76±0.190 and 4.61±0.195 in winter, summer and rainy season respectively. Lactose was found to be significant (P <60> 0.01) in season, location, milk and interaction of these. The protein content (g%) was higher during winter season (3.51 ± 0.171) than those during summer and rainy season (3.44± 0.170 and 3.47± 0.164 respectively) and showing the significant difference in the interaction of season location and milk. Higher ash content was found for the milk samples collected during winter season than those collected during summer season and rainy season (0.74±0.011, 0.73±0.010 and 0.72±0.012 respectively). The higher level of acidity percent was found during summer season. (0.152±0.007), than during winter and rainy seasons. Highly significant difference was reported for the interaction between season location and milk for means of all variables.

Gender role demarcates responsibilities between men and women in social and economic activities, access to resources and decision making authority. Assessing gender role differences helps in identifying the constraints and opportunities within the farming system. Present study was conducted in five villages of two blocks of Haridwar district of Uttarakhand state. From each village 30 households were selected, thereby, making a total of 150 households. Findings shows that all the farm activities i.e land preparation, transplanting, irrigation, application of manure and fertilizers, weeding, harvesting, marketing, management of revenue were independently performed by rural men in majority of the families and they were having complete responsibility of it. Women performed few farm activities like transplanting, weeding, harvesting jointly with men in 40.67% - 60.78% households. 3

Older people faced biological limitations more than the economic, political and social which inhibit and prevent people from remaining active more so after retirement. They need to work regardless of whether they live separately or with their sons as they sometimes need to contribute to the household in productive ways. In order to ascertain the reasons for taking up reemployment and to analyse the spending pattern of the income of reemployed, 100 subjects, who were doing jobs under an employer after their superannuation, were interviewed and information was gathered through a structured schedule using purposive sampling method. A majority of the respondents was in between 60 and 65 years though a few were found working even after 70. A majority of the respondent's spouses (80%) were alive. A majority of them were reemployed in the same type of jobs (57%), in new organizations (68%), and immediately after their superannuation (77%). The reasons for reemployment were interest to do job, necessity to maintain family, attend to the health needs and to clear the debts incurred while in service on their children education. A sizeable number of them were willing to work for 4 to 5 years.

Rural women constitute a storehouse of traditional knowledge. Attempts to present a rich variety of traditional foods served to the rural women specifically at pre- and postnatal stage. The traditional knowledge was documented from rural women using questionnaire based survey along with focused group discussion with key informants, local health workers and aged rural women. The information pertaining to ingredients used, method of preparation, frequency of consumption and logic behind consumption of these food preparations were recorded. The dietary practices followed by the local people at pre- and postnatal stages are based on different concepts. At the initial prenatal stage, to check abortion, seera is served as it is considered to possess cooling effect, while during ninth month, dietary practices emphasize on improving digestion and appetite, and provide energy to bear the stress of delivery. Decoctions and mixtures of herbs that can provide strength and stimulate the uterine contractions to aid in comfortable delivery are given at the time of labour pains. At post natal stage, food preparations like kharani, sund and moong dal halwa are served which are nourishing, provide energy and increase lactation. Since, the knowledge has been passed on from generation to generation orally; understanding and documentation of such knowledge can help to conserve the dying wisdom.

Although all mostly respects the aged people in Bangladesh, they are facing many problems, especially like loneliness, economic insecurity etc. So, the main purpose of this article is to search some explanatory variables, which are affecting the economic condition of the rural aged in Bangladesh. To do so, logistic regression model has been applied in data, which were collected from 300 aged people living in the rural areas of Gala union in Shahjadpur Thana of Sirajganj district, Bangladesh, using purposive sampling technique. The results indicate that education of the aged; type of family and type of toilets, and getting old age allowance (OAA) have statistically significant effect on the economic well being of the aged. In checking model validation, it seems from the statistics that the fit of the given model is well. Finally, this article provides some suggestive policy measures that the planners and implementers may consider for ensuring the economic security of the aged people in Bangladesh.

A questionnaire based survey was conducted among residents of Kalpetta municipality about consumption pattern and preferences for livestock products. Out of 587 families studied 94% were nonvegetarians. Cow milk was preferred first and the preference was independent of religion. Most of the respondents preferred desi hen egg and there was no influence on religion on it. Most of the families ranked chicken as their first preferred meat and their preference for meat was dependent on religion.

Present exploratory investigation was conducted to explore the perceived intricacies of farm women aspiring to undertake agribusiness activities. The study was conducted in randomly selected three villages from Bhiwani district of Haryana state on a sample of 240 farmwomen respondents who were willing to undertake agri- business activities like mushroom cultivation, dairy farming, beekeeping and vermicomposting It was found that among the various intricacies perceived by the farmwomen in undertaking agri- business activities lack of training and opportunities, lack of support and counseling economic incredibility being women and lack of risk orientation were the major ones. The most commonly perceived intricacies were social in nature followed by educational and personal intricacies.

The investigation aimed to evaluate the index of nutritional quality (INQ) of foods served to children (3-5years) in a private school under the care of nutritionist. Information about the foods served was collected by personal visits to the school from the nutritionist. A detailed record of the foods served on different days of the week was taken. Portion sizes given to each child were recorded by weightment method. The nutrient energy ratio (INQ) relative to a standard was calculated for all the foods served. It was observed that the children were being served supplementary foods following cyclic menu that included poha, vegetable pulao, masoor pulao, rajma and idli-sambhar. Meal times were found to be enjoyable by the children and they consumed the foods served to them without any leftovers. This observation is in contrast to the monotonous foods served under government scheme. The INQ for the protein, carbohydrate, fat, calcium and iron was calculated. An INQ of 1 and above indicates a good ratio of the nutrient to energy. It was observed that the INQ for protein ranged between a minimum of 0.93 (poha) to a maximum of 3.83 (rajma) indicating that the foods offered had a good index of protein. Similarly the INQ of fat ranged between a minimum of 1.8 (poha) to a maximum of 3.7 (sambhar).However the INQ for carbohydrate was found to be low ranging between 0.44 (sambhar) to a maximum of 0.99 (idli). A high INQ value (4.1) was observed for calcium in rajma while a low value (0.38) was observed in masoor pulao. Poha and vegetable pulao showed INQ values which were more or less similar i.e. 0.76 and 0.72 respectively. The INQ values for iron were found to be highest (6.2) in vegetable pulao and fairly good in poha and rajma, i.e.1.3 and 1.4 respectively. The rest of the foods had INQ value below 1 for iron. Based on the INQ values it was concluded that rajma was the best in terms of all the major nutrients and calcium and iron, followed by vegetable pulao, poha, idli-sambhar and masoor pulao in that order.

Whole grain cereals are being recognized for nutritional and unique processing qualities. The present investigation was undertaken to study antioxidant contents (polyphenol, phytic acid and trace minerals) of selected whole grain cereals, cooked and enriched foods. The results revealed that, cooking of regional staple foods significantly reduced the polyphenol content as compared to whole grains and ranged between 54.30 to 324.33 mg/100 g. Enrichment of traditional staple foods with natural food ingredients have enhanced the antioxidant contents and the values ranged from 54.30 to 324.33 mg/100 g (polyphenol), 1.49 to 3.90 g/100g (phytic acid), the zinc, copper and manganese contents ranged from 0.26 to 0.74 mg/100 g, 0.26 to 0.65 mg/100 g and 0.44 to l.1.08mg/ 100 g, respectively. Per cent acceptability of staple foods ranged between 48.40 to 78.40 per cent. Thus, Enrichment food not only enhances the antioxidant contents but also improves the aesthetic quality of food and also provides psychological satisfaction and nutritional benefits.

Normally Seetani/hurda is prepared by roasting tender panicle in trench using fire. Commercial exploitation of these varieties is hindered due to more time consumption, poor appearance of grains and cumbersome and unhygienic method in traditional roasting. Therefore, a study was undertaken to test the acceptability of roasting methods for hurda preparation. Two landrace varieties with sweet grains viz., Sakkari Mukkari Jola and Raosaheb were tested along with popular roti making variety M35-1 by subjecting to different roasting methods for hurda preparation. The roasting methods included were traditional roasting in trench, micro-oven and micro-wave. The varieties were tested for baking in micro-oven at 150 degree centigrade for three time ranges (15 min, 20 min and 25 min) and in micro-wave at 2 min, 2.5 min and 3.0 min. Standardization revealed the best time ranges for micro-oven and micro-wave were 20 min and 2.5 min respectively. Among the different methods, roasting in microwave consumes less time, enhanced threshability, yielding clean and soft grains and increases keeping quality compared to other two methods and hence suitable for commercial exploitation.
